I made this for the first time 3 months ago and it immediately became my daughters favorite. I've made it AT LEAST once a week since. 

It's literally exactly as it sounds.


Ingredients:

  1. Chicken
  2. Eggs
  3. Flour
  4. Cap'n Crunch
  5. Canola Oil (or whatever is your preferred oil)


Set yourself up as you would for fried chicken.

In a pan on a low heat, pour about a quarter of an inch of canola oil.

Flour in one dish. Eggs in a second dish. Cap'n Crunch in another dish.

*Not to plug for Pampered Chef, but their mix and chop is the best tool I have found to crush up the Cap'n Crunch*

I have seen several techniques to chop up the Cap'n Crunch, but you're going to want to make those as fine as possible... or at the very least the size you'd see a large bead crumb depending on how you like your breading for chicken.

Coat chicken in flour. From flour to Eggs. From eggs to Cap'n Crunch 'breadcrumbs'.

Fry chicken until Golden Brown on both sides (or at least fully cooked. I like mine crispy so each individual piece for me is somewhere around 6-7 minutes)
